So let me explain—mental health is really real, y’all. And if I’m being honest, it’s something I’ve only truly started prioritizing over the last few years. Like many other creatives, I struggle with having so many ideas bouncing around in my head that I sometimes just get stuck... and well, don’t follow through with any of them.

But if there’s one thing I always come back to, it’s food.
I love cooking. I love creating. I love making others smile and filling their bellies with warmth and goodness.

A Simple Moment That Meant Everything

Just the other day, I was at the grocery store picking up a few things for lunch. I wanted something healthy, quick, and easy to throw together. That’s when tuna pita sandwiches popped right into my mind. So I grabbed the ingredients and headed home.

Later, while I was in the kitchen chopping up the jalapeños and green onions, I felt this deep, unexpected wave of love rush over me.

It hit me—I was finally on the receiving end of the same love I’ve spent so much time giving to others through my cooking.
I smiled, thinking about how these very sandwiches once brought so much joy to my little sister. And now, they were doing the same for me.


Quick, Healthy, & Budget-Friendly: A Win-Win-Win

If you’re anything like me—budget-conscious but still wanting something flavorful and nourishing—this one’s for you. These Tuna Pita Pockets are:

🥙 Tuna Pita Pockets (Makes 4 pockets)

Ingredients:

  • 3 cans solid white albacore tuna in oil

  • ½ jalapeño (adjust to your spice level)

  • 1 stalk green onion

  • 1 small lime

  • 2–3 Tbsp mayo

  • Smoked paprika (optional)

  • Crushed red pepper flakes

  • Salt & pepper to taste

  • Warm pita bread for serving

Optional toppings:

  • Sliced tomato

  • Pepper jack cheese


Instructions:

  1. Drain your tuna, but save a little of the oil for added moisture and flavor.

  2. Finely chop your jalapeño and green onion.

  3. In a mixing bowl, combine tuna, chopped veggies, and juice from your lime.

  4. Add mayo, a dash of smoked paprika, crushed red pepper flakes, and season with salt and pepper.

  5. Mix it all together and stuff it into warm pita bread.

Optional: Add sliced tomato and pepper jack cheese for extra kick.
