 Hey sisters! How was your week? I hope it was amazing. Well, I’ve got a recipe that’s sure to brighten it up even more! Fun fact about me: I love avocado! It’s my go-to for salads—I could eat it plain with just a squeeze of lime and a drizzle of olive oil, and I’d be happy. And don’t even get me started on guacamole! Once, I tried it at a Mexican restaurant with a friend, and it had a surprise ingredient… pomegranate! And guess what? It was so good!

Now, since I love a good salad (and of course, it has to have avocado), I thought I’d share my favorite recipe with you. This salad is super fulfilling, packed with vitamins, antioxidants, and all the good stuff. And honestly, I measure with my heart, so use as much or as little of each ingredient as you like. Let’s get into it!

My Go-To Avocado Salad Recipe

Ingredients

  • Salad base: 2 generous handfuls of spring mix (or try romaine, spinach, or arugula if you prefer)
  • Veggies:
    • 1/2 red bell pepper, sliced
    • 1/2 yellow bell pepper, sliced
    • 1/2 orange bell pepper, sliced
    • 1/4 red onion, thinly sliced
    • A handful of cherry tomatoes, halved
  • The star: 1 ripe avocado, sliced
  • Optional add-ons:
    • Roasted sweet potatoes, diced
    • Roasted carrots, diced

Dressing

  • Juice of 1/2 a lime
  • 3 tbsp extra-virgin olive oil
  • 1–2 tbsp honey
  • Sea salt and freshly cracked black pepper, to taste

Directions

  1. Assemble the Salad: Start with the spring mix or your preferred greens as the base in a large bowl. Add in the sliced peppers, red onion, cherry tomatoes, and avocado. If you’re feeling fancy, toss in the roasted sweet potatoes and carrots for a bit of extra heartiness.

  2. Make the Dressing: In a small bowl, whisk together the lime juice, olive oil, honey, salt, and pepper.

  3. Dress and Toss: Pour the dressing over the salad and toss everything together gently to avoid mashing the avocado.

  4. Serve: Pair it with a piece of grilled fish, a crab cake, or your favorite protein on the side for a balanced meal.
