I’m back this week with another salad recipe! Yes, we love a good salad—well, I know I do for sure. Let me share the story behind how this recipe came to be.
It all started during the COVID lockdown, sometime in the summer of 2020. Like many of you, I loved going out to restaurants to enjoy lunch and dinner with friends. But when the world shut down in 2019, we had to put all that on pause. Fast forward to summer 2020—restaurants were back open, but only for outdoor dining.
So there we were, spending weekends out (and by “we,” I mean my then two close friends, let’s call them Yasmeen and Daria). We had so many fun times dining at this lovely spot called SOMO. Shoutout to SOMO for inspiring this incredible salad recipe—and for the amazing memories and conversations we shared there.
I was on a health kick back then, so salads were my go-to. This particular salad quickly became a favorite and remains a favorite to this day. It’s super healthy, with beets as the star of the show, goat cheese adding a smooth and creamy touch, and roasted cashews for just the right amount of crunch and protein to keep you satisfied. As always, I kept it simple with a vinaigrette dressing that’s light yet full of flavor.
Here’s the recipe:
- Greens: A handful of spring mix, arugula, or spinach
- Beets: One whole beet, chopped
- Goat Cheese: A handful of crumbles
- Cashews: A small handful of roasted cashews, lightly crushed
For the vinaigrette:
- 3 tablespoons olive oil
- 3 tablespoons freshly squeezed lemon juice
- Salt & pepper to taste
- 1 tablespoon honey (optional)
Mix it all together and enjoy this fresh, vibrant salad. It’s easy, healthy, and oh-so-satisfying!
