The Somo Salad...

Let me share the story behind how this recipe came to be. It all started during the COVID lockdown, sometime in the summer of 2020. Like many of you, I loved going out to restaurants to enjoy lunch and dinner with friends. But when the world shut down in 2019, we had to put all that on pause. Fast forward to summer 2020—restaurants were back open, but only for outdoor dining. So there we were, spending weekends out (and by “we,” I mean my then two close friends, let’s call them Yasmeen and Daria). We had so many fun times dining at this lovely spot called SOMO. As I Am made it so easy for us to switch up our hair color without all the damage that comes with permanent dye. Let me tell you, I dyed my hair with box dye back in 2018, and whew, I wouldn’t recommend it. Fun fact about me: I love avocado! It’s my go-to for salads—I could eat it plain with just a squeeze of lime and a drizzle of olive oil, and I’d be happy. And don’t even get me started on guacamole! Once, I tried it at a Mexican restaurant with a friend, and it had a surprise ingredient… pomegranate! And guess what? It was so good ! Now, since I love a good salad (and of course, it has to have avocado), I thought I’d share my favorite recipe with you.
